Schola Sarmenti "Nauna" Salento IGT

​This is a premium, rich, and powerful red wine from the Salento peninsula in Puglia, the "heel" of Italy's boot. Crafted by the renowned estate Schola Sarmenti, it is a benchmark representation of the bold and sun-drenched terroir of Southern Italy.

​The Technical Highlights

​Grape Varieties: A classic Puglian blend of 60% Negroamaro and 40% Primitivo.

​Old Vines (Alberello Pugliese): The grapes are harvested from old bush vines ranging between 50 to 55 years old. These low-yielding old vines yield berries with incredible concentration and complexity.

​Aging: The wine is aged in new French oak tonneaux for about 8 to 9 months, followed by another 8 to 10 months of bottle aging before release.

​Alcohol Content: Typically high, around 15.5% to 16% ABV, offering a robust, full-bodied structure.

​Tasting Notes

​Appearance: Intense, deep ruby red with subtle violet reflections.

​Nose: An explosion of aromas. It opens with ripe dark berries, blackberries, and plum jam, seamlessly integrating into complex notes of tobacco, leather, dark chocolate, and a touch of sweet vanilla from the oak.

​Palate: Full-bodied, velvety, and enveloping. Despite its high alcohol content, the opulent fruit profile and ripe, smooth tannins create a beautifully balanced mouthfeel. The finish is remarkably long, leaving lingering notes of cocoa and toasted spice.

​Food Pairing Suggestions

​Because Nauna is an incredibly intense, high-alcohol, and full-bodied wine, it requires hearty, robust dishes that can stand up to its power.

​1. Grilled & Roasted Red Meats

​Flintstone Steak / Florentine T-Bone: Heavy charring from a grill beautifully complements the wine’s smoky, oak-aged characters.

​Roasted Rosemary Lamb Chops: The herbal notes of rosemary and the rich fat of the lamb cut right through the wine's bold tannins.

​2. Slow-Cooked & Braised Dishes

​Braised Beef Short Ribs or Oxtail: Rich, gelatinous meats slow-cooked in a heavy reduction sauce match the velvety texture and weight of the wine perfectly.

​Venison or Wild Boar Stew: The gamey depth of wild meats pairs excellently with the rustic, earthy complexity of the Negroamaro grape.

​3. Aged Cheeses

​Mature Hard Cheeses: Think Pecorino Romano, Aged Parmigiano-Reggiano, or Grana Padano. The salty, savory crystals in aged cheeses create a brilliant contrast with the sweet jamminess of the Primitivo fruit.

​💡 Service Tip: Serve this wine at around 16°C – 18°C. Because of its high concentration and old-vine structure, it is highly recommended to decant it for at least 45 to 60 minutes before serving to let the tobacco and dark cocoa aromas fully unfurl.

外觀:每一株葡萄藤都代表一道考驗,點燃靈魂。從剛栽種的強健、繁茂的植株所孕育的葡萄酒,帶來清新與果香;到更成熟的植株,則如同訴說雙手的故事與愛的故事。六月裡,當陽光溫暖空氣,專業的農夫會修剪並疏果,讓葡萄串在植株上只留下少數果實。綠色修剪是一項古老的技術,以犧牲產量換取品質,這份品質將成為所有努力的驕傲,也成為我們偉大葡萄酒的靈魂。我們以熱情與耐心,用自然的方式耕種葡萄園,不使用任何化學肥料或除草劑,尊重植株的自然生長週期,以及土地與土壤的所有生命;而我們只用有機肥悉心照料土地。事實上,我們所有葡萄園都採用有機方式種植;它們被樹籬和樹木環繞,距離海只有一步之遙,生長在健康、自然的環境中。

釀造:葡萄進入酒廠後,會再透過先進的分選桌進一步挑選。熟成:在中度烘烤的法國橡木桶(tonneaux)中熟成9個月,並在瓶中熟成8個月。
